🌿 Story Behind the Dish: This delightful salad is a family favourite, especially cherished by Chef Andrea’s daughter. With the vibrant colours and flavours of autumn, it’s a fresh dish that connects us to the season and the love we put into every meal.
🏡 Homegrown Goodness: Our beetroots are fresh from the garden, nurtured with the same love that fills our kitchen. They’re a testament to the organic bounty of nature and the joy of seasonal cooking.
- 2 nice big beetroot (around 400g)
- 2 nice big Granny Smith apples
- 300g mayonnaise
- 100g Greek yogurt
- Mustard, salt, pepper, lemon juice to taste
- A dash of nutmeg for that extra touch
- Start by baking the whole beetroot in their skins. Allow them to cool and then peel them. Cut them into 1 cm cubes.
- Peel the Granny Smith apples and cut them into cubes of the same size as the beetroot.
- In a mixing bowl, combine the cubes of apple and beetroot.
- Mix the mayonnaise with the cold apple and beetroot mixture. If needed, add extra yogurt as the apple and beetroot can absorb some of the moisture from the mayo.
- Season with mustard, salt, pepper, and lemon juice to your taste.
- Add a dash of nutmeg for that extra layer of flavour.
- Mix everything together until the salad is well coated in the dressing.
